You will Need:
  • 2 fresh tomatoes, 1 cucumbers (or 2 smaller ones)

  • 100 gr. Greek feta cheese

  • 15-30  Kalamata Olives

  • 1 medium onion, 1 green pepper

  • salt, oregano,

  • Extra virgin olive oil 1/2 cup & Wine vinegar a table spoon

Method:

Chop the tomatoes and cucumber into slices, in a plate. Cut the onion into thin rings add the tomatoes and cucumber and mix. You can include fresh pepper rings and olives. Add salt. Slice the Feta cheese into cubes and put on top of the salad. Add a pinch of oregano over the whole dish. Pour the  Extra Virgin olive oil & vinegar over the salad and mix well. Serve in room temperature.


Serve with a white dry Greek wine and enjoy. Pick a dry white Roditis or an Assyrtiko  from Santorini...
