| Combine three tablespoons of Kalamata Extra
Virgin Olive Oil, the juice of ½ lemon, and fresh parsley. Adjust to your
taste. Blend well and pour it over the fish before serving. |

fresh tomatoes, 1 large cucumber
1 medium onion, 1 green pepper, salt, oregano,
100 gr. Greek Feta cheese, 15-30
Kalamata olives
1/2 cup Olivia's Choice Extra Virgin Olive Oil, and 1 tablespoon of wine
vinegar |
Slice the tomatoes and cucumber.
Cut the onion and green pepper
into thin rings. Add a pinch of oregano and salt, olive oil and
vinegar and toss well. Place olives and a large slice of Feta cheese on top of
the salad. Serve at room temperature.
Serve with a white dry Greek wine. Roditis dry white or an Assyrtiko blend are recommended. |
