SALADS

Greek Salad

Traditional

Preparation Time: 10-15 minutes
You will Need:
  • 2 fresh tomatoes, 1 cucumbers (or 2 smaller ones)

  • 100 gr. Greek feta cheese

  • 15-30  Kalamata Olives

  • 1 medium onion, 1 green pepper

  • salt, oregano,

  • Extra virgin olive oil 1/2 cup & Wine vinegar a table spoon

Method:

Chop the tomatoes and cucumber into slices, in a plate. Cut the onion into thin rings, add to the tomato and cucumber and mix. You can include fresh pepper rings and olives. Add salt. Slice the Feta cheese into cubes and put on top of the salad. Add a pinch of oregano over the whole dish. Mix and Pour the  Extra Virgin olive oil & vinegar over the salad. Serve in room temperature.


Serve with a white dry Greek wine and enjoy. Pick up a Roditis dry white or an Assyrtiko  from Santorini ...

Greek Salad

Preparation Time: 10-15 minutes
You will Need:
  • 5 Juicy (but firmish) Tomatoes

  • 15-30  Kalamata Olives

  • 1 Bag of washed Leaves (Rucola)

  • 1 Large block of Feta Cheese (firm Feta, not the cubes of Feta in oil)

  • Greek Extra Virgin Olive Oil (to taste)

  • Salt and pepper (to taste)

Method:

Chop up the tomatoes and feta cheese into cubes and toss with the olives in a large salad bowl. Dress with Olive oil, salt and pepper and serve in a bowl over the bed of Rocket leaves (Rucola). The secret to this very simple dish is using top quality ingredients. Use only the best Extra Virgin olive oil, and real Kalamata olives will make the salad full flavored.


Serve with a white dry Greek wine and enjoy. Preferably a mild  Savatiano or an Athiri from the isle of Rhodes.
